You must wait for the sugar to dissolve. You must wait for the fudge mixture to heat to the right temperature. You must wait for the mixture to be beaten until it’s very thick. And although it will be the hardest part, you must wait for the fudge to properly cool.

Most of the time making this fudge is spent hands on, so this is not something you can walk away from during cooking.

Easy Rum Raisin Fudge

Cook Time: 35 minutes

Total Time: 2 hours, 45 minutes

Yield: About 64 square inch pieces

Ingredients

  • 2 tablespoons dark rum
  • 3/4 cup raisins
  • 1/2 cup vanilla extract
  • 1/2 cup (1 stick) butter
  • 2 cups cane sugar
  • 1/2 cup + 2 tablespoons (or 10 tablespoons) whole milk
  • 1 14-oz can sweetened condensed milk
  • Needed materials:
  • Heavy bottom large pot
  • Candy thermometer
  • Hand or stand mixer
  • Wax paper

Instructions

  1. Combine the rum, raisins, and vanilla in a small bowl. Line an 8x8 baking dish with wax paper.
  2. In a large, heavy bottomed pot, add the milk, butter, and sugar. Heat the mixture over medium-low heat, stirring frequently, until the sugar has dissolved.
  3. Stir in the sweetened condensed milk and raise the heat to medium-high. Bring the mixture to a boil, then turn the heat back down to medium-low. Simmer over medium-low heat stirring constantly for 20-35 minutes until the mixture reaches 245 degrees F. Be sure to stir the bottom and sides of the pan to ensure that parts there aren't burning!
  4. When the mixture has reached the proper temperature, pour it into a large, sturdy plastic, glass, or ceramic bowl. Let it cool for 3-5 minutes, then add the soaked raisins to the fudge mixture. Beat the mixture on high speed for 10 minutes or until it is very thick and looks like it's starting to form a large soft ball on the beaters.
  5. Spread the fudge mixture evenly in the baking dish. Place the fudge in the fridge to cool and set for 2 hours or until firm. To serve, cut the fudge into 1-inch cubes with a knife run under hot water. Enjoy!
